Yummy Summer Gazpacho

Hey Everyone!

With the amazing summer weather we have been having I decided to make a fresh gazpacho.

The great thing about gazpacho is that it can be eaten hot or cold.

So I made a huge recipe and then saved the leftovers for lunches the rest of the week.

So lets get started!

For this recipe you will need:

Green beans, carrots, onion, macaroni noodles, diced tomatoes, garbanzo beans, zucchini, broccoli, olive oil, 1 and 3/4 cup of chicken broth, and 3 cups of water, and garlic.

You might have noticed that I have a box of macaroni and cheese.

I left the cheese out obviously and just used the noodles.

Sometimes in the kitchen you have to be flexable and work with what you have.

There really is no rhyme and reason to this recipe just chuck it into the pot and let me all cook up.

I hope you guys enjoy this recipe!!

Let me know if you fix this and how you like it!

Have a wonderful rest of the day!

Garlic and Soy Grilled Pork Chops

Hey Everyone!

Today is the first day of Spring Break for me.

While I didn't get any crafts done or organize today, I purchased all the things I need to start tomorrow!!

Our recipe for the day is Garlic and Soy Grilled Pork Chops

For this recipe you will need:

4 boneless center cut pork chops, trimmed of all visible fat
1 T lite soy sauce
2 t minced garlic
1/2 t paprika
1/2 t salt
1/4 t pepper

Sprinkle chops with soy sauce, garlic, paprika, salt and pepper. Cover and refrigerate at least 20 minutes and up to 2 hours.

Spray grill pan or broiler pan with cooking spray. Pre-heat grill or broiler.

Cook chops 4" from heat, turning once halfway through cooking, 10-12 minutes, or until thermometer registers 155 degrees farenheit and juices run clear.

The last thing to do is to serve it up and enjoy!!

Each chop is 178 calories!

I hope you guys enjoy this recipe!

See you on Wednesday for Wordless Wednesday!
