Lunch Time: Hummus and Veggie Sandwich

Greetings Everyone!!

I hope you are all having a wonderful Tuesday!

Today for lunch I am sharing with you one of my all time favorite sandwiches.

Hummus with Veggie Sandwich

For this sandwich you will need:

Whole Wheat Bread, Hummus, Mustard, Cheese, Spinach, and Tomato



First spread one side of your bread with hummus and the other with mustard if you so choose.





Next load up your sandwhich with your cheese, tomato, and spinach!
Feel free to get creative and add all the veggies you want!!






All you need to do now is enjoy!!





Or if you are on the go like me and want to keep your diet on track.  Pack up your favorite lunchbox with your sandwich and a grapefruit!

This sandwich might not look very filling but it most certainly is.  It also only has 418 calories!! It is packed with fiber and protein from the hummus as well as iron and various vitamins and minerals from the veggies. 

Not many people realize just how much veggies can fill you up without packing on the calories!

Check this out!!!



This is an amazing interpretation of why America is facing the problem of obesity!  It takes far more calories of fast food and junk food to allow ourselves to fill full.  Yet we can eat lots of vitamin rich veggies and feel full for the same amount of calories. 

Think about it folks!!

Breakfast: Peanut Butter, Banana, and Honey Sandwich

Happy Monday to you all!!

I hope you all had a wonderful weekend.  Mine was spent with family and at church.  I even had the opportunity to have a girls day with my brother's girlfriend, Emily.  We went and had our nails done and went to Panera for lunch. 

I enjoyed their Thai Chopped Chicken Salad and an Iced Green Tea!  It was amazing!!! I hope to be able to share those recipes with you soon so that you can make them at home.




So today for breakfast we are serving up:

Peanut Butter, Banana, and Honey Sandwich!

For this tasty breakfast you will need:


 Whole Wheat Bread, Banana, Honey, and Peanut Butter of your choice (smooth or crunchy)

First spread a teaspoon of peanut butter on one piece of bread.


 Next slice up your banana.



Then drizzle the tops of your banana slices with honey.




Then all that's left to do is enjoy!!




This is a great breakfast item because it is packed with protein in the peanut butter and potassium from the banana. And better yet it only has 265 calories!!!

This can be also ate as a snack or even lunch.  I chose to eat only half of the sandwich for calorie reasons but this would also be great as a whole sandwich for lunch.  I love to have this as a snack as well or even dessert because it is a sweet and healthy alternative.

Tasty Tuesday: Garlic Lemon Hummus

Greetings Everyone!

Happy 2012 to you all!

This year is going to be the best one yet.
So for your first recipe of the new year I bring you a healthy snack option. 

Garlic Lemon Hummus!

For this recipe you will need the following things..


Chickpeas
Garlic
Lemon (not pictured)
Olive Oil
Salt
Pepper

This recipe can be tailored to your various tastes and is extremely versitile!

Lets get started!


Add all of the ingredients into your food processor.  I was able to make two batches with the four cans that I had pictured.

When adding your olive oil make sure you add it in small amounts at a time.  The olive oil will keep the hummus moving and blending smoothly.

Keep blending and adding olive oil until you get a smooth creamy consistancy.  Check your seasonings add more salt or pepper if need be.


Serve with fresh veggies or on a sandwich!
Hummus is one healthy treat packed with protein (Chickpeas) and healthy fats (Olive Oil)
