Tuna Salad with Kale, Carrots, Apple, Lemon, and Balsamic Vinegar

To make this Tuna Salad Alternative you will need:


Chop your Kale into bite size pieces.


Add your chopped carrot.

Add the chopped apple.

Then add your tuna.

Dress your salad with Lemon and Balsamic Vinegar.

Lastly mix all together and ENJOY!!!

Today's Workout: BodyRockTV's It's So On Right Now Workout

BodyRockTV is the at home workout movement that can be found on youtube.


Today's workout was brutal and extremely challenging.
I did all of the beginner versions of all of the exercises since I am just starting out on there exercise program.
You can find all the information including a step by step video on how to do the workout by clicking the link below.
I recorded the amount of reps that I did for each exercise.  See if you can beat my scores.

Squats- 18, 20
Knee Pushup/Burpee- 5, 6
Turkish Get-up- 5, 5
Crab Leg Lifts- 30, 35
Right Elevated Foot Squat- 15, 21
Left Elevated Foot Squat- 19, 18
Lunge with Knee Crunch- 15, 20
Mountain Climbers- 34, 44
Lunge with Low Jack- 10, 16
Squat with Side Crunch- 14, 20
Exhausted but feeling extremely empowered!!

Shake It Up: Peachy Zucchini Protein Shake

 
Peachy Zucchini Protein Shake

*Don't Knock It Til You Try It*
 
For this smoothie you will need: 


Pour Orange Juice into bottom of the blender. (About 4oz)
Then add your zucchini (1/2 cup) and peaches (4 frozen slices).

 
Then add one scoop of your whey protein powder.  Mine happens to be Vanilla.


Blend everything until smooth.  If it is slow to blend just add a little filtered water.


The only thing left to do is serve it up and enjoy!

 
Protein is essential in rebuilding your muscles after a hard workout. Usually after working out I don't feel like eating a meal.  So for me a protein smoothie fits the bill.

Lets Get Crackin': Dismantled Omelet

Dismantled Omelet

For This Dish you will need:


First Saute`the dice onion
Next Add Your Tomatoes with Chilis


Then Make A Well in the Center and Add your Kale


After the Kale cooks down, make another well in the center and get Crackin'.  I used the whole egg for more protein.  However feel free to use just egg whites for this recipe.  The fun part of cooking is experimenting and making recipes fit your tastes and needs.


Now begin to scramble all of your ingredients together.


Add a dash of hot sauce if you so desire and enjoy with a cup of coffee or hot tea.

Stress= Backsliding

I had been pretty successful with exercising and eating a healthy diet.  However school has started up once again and with it comes stress.

I will be the first to confess that when I am stressed I eat and eat and eat more.  For the past week I have ate so much processed junk.  My body can feel it as well.  I feel sluggish, out of sync, heavy, and unhappy.

However I have fit in a few healthy meals in here and there. So here are a few pics of what I have been up to and what I have been eating (the healthy meals that is)

Tilipia with Grown Up Mac n Cheese

Beautiful Tilipia Fillets


Cook one Onion
Add cooked noodles, tomatoes, white beans, seasonings, romano cheese, and allow spinach to wilt on top.

Cook Tilipia seperately then add on top of your grown up Mac n Cheese

Lastly I have had a cold for the past few days and nothing I tried was working at all.  That was until dinner tonight when I had rice noodle soup with shrimp and bean sprouts.  I also added tons of chili paste and saracha.  Cured my cold in a jiffy.


I hope you are all doing well.  Next weekend I will be starting off my new diet and exercise regiment with a backpacking trip on the Appalachian Trail with members of my church.

Busy Busy Busy..Green Smoothies..Sore Muscles..OH MY!!

Hey Everyone!!

I know it has been several days since my last post.  But in my defense I had Vacation Bible School at my church and at the end of the day when I finally got home every night I was exhausted!!

Also I have decided that instead of posting my daily food and exercising schedule, that I would take pictures instead.  This way I can flex my creative photography muscle as well as save myself from typing so much.  As I am sure the post can get boring.  So what have I been doing for the past few days to keep myself fit and healthy?  Check out these photos!!

Out of the Mouth of Babes

Greetings!

Most of you know I am a preschool teacher during the day.  Well this week we are learning all about the heros and villians of the bible.  Today we learned about Adam and Eve and Satan who was in the form of a snake, Moses and Pharoah, and David and Goliath.  We talked about how sometimes Satan tries to make us do things that aren't right and against God. 




Then William the sweet, precious boy above spoke up. "Miss Laura you know those stories are kinda like what happens in Star Wars. The bad guys like Darth Vader are tempting Luke and Anakin to come over to the dark side.  Just like Satan tempts us to go against God. But Anakin gives in an becomes bad while Luke stays good and becomes the hero!"

And who says kids can't learn from Star Wars!!!

Well onto the Journal part of the day!

Food Journal

Breakfast: Coffee with Creamer, Greek Yogurt with Honey, and an Apple/Multifruit Buddy Fruit.

Lunch: Bowtie pasta with broccoli and peppers

Dinner:  Ham and Cheese Sandwich, Green Beans, corn, and an M&M cookie.

Snack: Buddy Fruit and a Wild Cherry Capri Sun.

Water Intake:  8/8oz glasses

I have been really good about staying under my daily caloric intake.  However today I went over.  I am a little disapointed in myself and I probably could have done without the cookie.  But the thing is you learn from the decisions that you make and you learn not to do them again.  So moving on towards tomorrow with a healthy and positive attitude!

I also was so busy today that I wasn't able to fit into a real workout.  However I am really active during the day and I burn a lot of calories playing with the kids at my work.  However I am currently working on finding time and the type of workouts that will work for my busy schedule.  I will try to post that soon.

Oh Mondays!!!

Quick Post tonight everyone.

OH Monday how I loath you sometimes.  Oh how you keep my alarm from going off and making me late for work. Ugh anyways I said this one was going to be quick then its off to bed.

Food Log

Breakfast: Lance grilled cheese crackers. ( I have been lax the past few days because of the chaos but I am back full force tomorrow!!)

Lunch:  Key Lime Greek Yogurt and 2 Japaleno cheese wedges

Dinner: Spaghetti and salad

Snacks:  Buddy Fruit pack and small portion of pasta salad.

Water Intake: 3/8oz glasses of water :(

Traveling Back In Time...Hometown Nazareth

ברוך הבא

That means Welcome in Hebrew.  For the past few weeks my family and I have been working like crazy to build a replaca of a home that Jesus himself might have lived in when he was growing up in this hometown of Nazareth.  That is the theme for our Vacation Bible School this week at my church.  I am proud to say that the house is still standing. It also turned out better than I thought it would..I know, I know, oh ye of little faith right.



My food and exercise journals were as follows for the day.


Food Journal:

Breakfast:  Coffee with Creamer ( I know not healthy at all.  I was running late this morning and unfortunately didn't get a good breakfast in me.)

Lunch:  One small piece of fried chicken with the skin off, two slices of tomato, and two strawberries. 

Dinner:  Leftover small piece of fried chicken, two slices of tomato, and a few carrot sticks with ranch dressing.

Snacks:  Key Lime Greek Yogurt, 2 Weight Watchers Japaleno Cheese wedges.

Water Intake: 2/8oz glasses (Not enough water today and I can tell a huge difference. Water is so important!!)

Exercise Journal:

Pieced together one very large Nazerene house of cardboard
Watered flowers at a house sitting client of mine
Cared for 19 preschoolers in my group at VBS!!! YIKES!!

Eventhough as I lay here and type I find myself getting sleepy I remember this wonderful day and all of the great moments spend with my fellow children of God.

My Cheat Day- Yes I said cheat!

Greetings Y'all!

I hope you all had a wonderful day!!

I am a huge fan of reading blogs.  One of the blogs that I enjoy is Bodyrock.tv.  At Bodyrock.tv you can see free workout videos and diet advice from Zuzana and Freddy. 


They are wonderful!!  I haven't been brave enough to try their extremely intense workouts yet, but I will get there.  Anyways the point of mentioning them is the fact that they believe in taking a cheat day.  Which I think is genius.  So many times diets fail because we don't allow ourselves to still enjoy the things we love.  So one day a week I will pick a day to have a cheat day. 

Now this doesn't mean I am going to go crazy and eat everything in sight.  No, this means that I will still follow my diet plan but I might allow myself to have something that I have been craving that week.  As you look at my food journal today I will astrick the items that were part of cheat day.

Today was such a beautiful day!!  The dogs and I went for a walk this morning and I must say nature did not disappoint.



So onto my food/exercise journals for the day.

Food Journal

Breakfast:  Coffee with creamer and Key Lime Pie Greek Yogurt.
I spent my morning with my favorite southern butter lover!!

Lunch:  White Bean, Spinach, and Tomato Pasta, Buddy Fruits Apple Cinnamon.

Dinner:  HUGE salad at Jason's Deli's salad bar, and *ice cream*



Snack:  2 Weight Watchers Jalapeno Pepper cheese slices, Buddy Fruit Apple Cinnamon flavor, detox tea, and *1/2 of a small popcorn from the movies*.

Water Intake:  8/8oz glasses

I also took my vitamins as well today.

Exercise Journal

30 mins: Walked the dogs
45 mins:  Worked on building a Nazerene home out of cardboard for VBS.


This was a great workout! All three of us were exhausted!

Today was a great day.  I was able to get so many things done. But most importantly I got to spend time with two of my most favorite people in the whole world, Mason and Payton, my two little cousins.


We had dinner together and then went and saw the Smurfs movie.
