Food For Thought! My Favorite Food Documentaries

Happy Friday Everyone!

Today is going to be a quick post but a very informative and entertaining one.

So those that know me know that I am a documentary junkie!

Today I am sharing with you my 3 favorite food documentaries.

All of these films can be seen on Netflix.

My favorites are...

Fat, Sick, and Nearly Dead



This is a great film all about the power of juicing.  Every single time I watch it I want to go out and buy a juicer right then so I can try it.

The next film is Forks over Knives




This film takes a good hard look at the importance of a fruit and veggie based diet.

The last one is Food Inc.



This is one eye opening film about how we as American's eat and how our food is processed.

What are your favorite documentaries?

I am always in the hunt for the next great documentary!

I also want to draw your attention to a wonderful set of books that focuses on living a more natural and green life.

They are by the author, Sophie Uliano and I recommend that you add them to your reading list.

Dinner Time: Easy Peazy Hot and Sour Soup

Hey Classy People!!

I hope this post finds you all healthy and happy!

So today I bring you an AMAZING recipe!

It's one of my absolute favorites and hits the spot everytime!

Easy Peazy Hot and Sour Soup

For this recipe you will need:

 1 c. tofu, firm, cubed
1c. Cloud ear or shittake mushrooms
7.5 c. chicken broth
3 Tbl Rice vinegar
3 Tbl Soy sauce
2-4 tsp Asian Chili sauce, or to taste
1 Tbl Sesame Oil
3 Tbl of Cornstarch
3Tbl of cold water
    First add your broth, mushrooms, bean sprouts, soy sauce, rice vinegar and chili sauce into your crockpot.
    Let this cook on high for 2 to 3 hours then add your tofu, sesame oil, and mix your cornstarch in the water and add to the crockpot.
    Allow to cook for 10 mins
    The last thing to do is to serve it up with a nice piece of crusty bread if you wish and enjoy!
    I sauted up some Bok Choi with garlic to go along with the soup.
    This soup is so warm and filling and guaranteed to help cure your worst cold!
    Not to mention for a serving size of one cup has only 68 calories!
    Yes you read it right 68 CALORIES!!!!!!
    I hope you guys enjoy this recipe and it might be a good thing to try something new.
    If you have quams about using tofu then subsitiute it for cooked chopped chicken.

Lunch Time: Tuna Veggie Salad

Happy Valentine's Day Everyone!!

I hope you are all having a wonderful day!




 
Okay so confession time...

I have fallen off of the healthy living bandwagon these past few weeks.

*sigh*

I really can tell a difference when I don't eat right and I neglect to exercise.

My body started fighting against me and I was sick for the past week.

So its back on the bandwagon for me and I have a new recipe for you today!

Tuna Veggie Salad!











Drain all of your veggies to reduce the sodium content and add to a bowl with the tuna






Drizzle with Olive Oil






Drizzle with Red Wine Vinegar







Finally finish it all up with some fresh lemon juice.


Store it up and serve when needed or pack it up in your favorite lunch box and take it for lunch on the go!

This recipe yields 6 servings and there are only 333 calories per serving.

Hopefully this week I will be doing some research on using more natural and green ways to take care of ourselves.

Lunch Time: Caprese Feta Pasta Salad

Happy Tuesday to you All!!

I hope you enjoyed the recipe from yesterday. 

I had two of the "cups" and a cup of coffee this morning for breakfast.

Today's recipe is Caprese Feta Pasta Salad.

For this recipe you will need:


8 oz small pasta
8 oz feta cheese, crumbled
16 oz grape tomatoes
4 c spinach
olive oil
lemon
salt and pepper




While you are cooking your pasta, in a separate container, add your spinach.
I am putting them into two containers, one for today's lunch and one for tomorrow.


Tip of the Day: Place a wooden spoon across your pot to prevent it from boiling over.


While your pasta continues to cook, take the juice of one lemon, salt and pepper, and an equal amount of olive oil and mix together in a bowl.




Place your tomatoes into the bottom of the colander so that when you drain the pasta it will blanche the tomatoes really quick.




Then drain your pasta over the tomatoes.





Next, add your cooked pasta and tomato mixture to your spinach. Top with feta cheese.



Last add your lemon vinaigrette to the pasta salad and enjoy!!



This recipe is healthy, filling, and fresh!

It also only has 267 calories per serving with this recipe yielding 6.

Breakfast Time: Make Ahead Breakfast Cups

Hey Everyone!!

Hope you are having a great Monday and enjoyed the game last night.

I did my best not to pig out on all the yummy Super Bowl food but one thing to remember about having a healthy diet is moderation.

Today's Breakfast recipe is Make Ahead Breakfast Cups!

These are great if you are not a morning person like myself.

These are tiny and compact and you can eat them on the go.

For this you will need:



1 onion, chopped
1 green pepper, chopped
4 cloves garlic
1 tbsp olive oil
1 cup frozen spinach (or fresh)
12 large eggs



First Chop your onions and peppers



Saute the garlic




Next, saute the peppers and onions




After your veggies cook down begin to add the spinach and allow it to cook down adding more as it does so.




After your veggies cook allow them to cool down. 
While they are cooling crack 6 eggs.
The recipe calls for 12 eggs but you will understand why I used only 6.





Take half of your veggies and put them in a seperate container and save them for another time. This recipe yields 18 cups.  I will not eat this many in one week so I cook what I need and save the extra for a later cooking day.

Make sure that before you add the other veggies to your eggs that you allow them to cool down. We don't want a scrambled egg cup.




After mixing it all together pour it into slightly greased muffin cups.

Cook at 350 degrees for 30 mins turning off the oven at the 25 min mark and allow them to sit for the last 5 mins in the extra heat.




All that's left to do is to enjoy.

Each "cup" is only 75 calories!!

You can place them in an airtight container or freeze them for future use.

Just warm them up when you need them.

Satisfying Your Inner Health Nerd: My Favorite Health and Fitness Apps


Hey Everyone!!

Hope you are doing well today!

So today instead of bring you a snack recipe I thought I would provide you with some of my favorite apps.  One that includes a plethora of health snack options.

First is Pandora Radio
I love this App!
There are so many different stations to pick from and I love coming across songs that I haven't heard in years!



Next is Fit Radio
Sometimes on Pandora you might get a station where all of the music isn't peppy and upbeat.
Well with this app you are constantly being hit with amazing heart pumping beats!





Next is Spark Recipes.
This app is the Mecca of healthy recipes.
They allow you to save favorite, email recipes, and have various methods of searching for your next healthy dish.
Each recipe provides the ingredients list, instructions, and nutritional facts for them.
GREAT APP!





Next is My Fitness Pal
This is a great app if you are trying to keep track of what you eat.
It has a huge database of different foods and their calories.






Next is Unified Life style's Restaurant Calorie Database
This is a great app for preparing for a night out.
You can look ahead so that you can make a healthy choice when you get to your destination.







Next is the Interval Timer App By Plain and Simple Software
This is great to keep track of your interval workouts and such.
If you are a Bodyrocker like me, you know just how important your interval timer is!





Last is Shopping List Free.
This is a great way to categorize your shopping list to make your trip quick and efficient.
This is also a good way to avoid making any unnecessary purchases.
